Ingredients : ( Servings : 5-6 persons )
1. Pumpkin ( Kakharu ) – 400gm ( approx. ) 1 bowl
2. Spine gourd ( Kankada ) – 3 pcs
3. Pointed gourd ( Potala ) – 3 pcs
4. Raw Papaya ( Amruta bhanda ) – 1/2 bowl
5. Drumstick ( Chhuin ) – 1 pcs
6. Cauliflower ( Phula Kobi ) – 5-6 chunks
7. Carrot ( Gajar ) – 1 pc
8. Beans – 50gm ( 1/4 bowl )
9. Yam ( Kamba alu / Desi Alu ) – 5-6 chunks
10. Arum ( Saru ) – 1
11. Beetroot – 1/4 bowl
12. Potato ( Alu ) – 3 pcs
13. Brinjal ( Baigana ) – 2 nos.
14. Okra / Lady’s finger ( Bhendi ) – 4 pcs
15. Ridge gourd ( Janhi ) – 1 small ( 1/4 bowl )
16. Cabbage ( Bandha Kobi / Patra kobi ) – 1/4 bowl
17. Tomato – 2 large
18. Ginger ( Ada ) – 2 inch
19. Green Chilli ( kancha lanka ) – 3 pcs ( or as required )
20. Grated Coconut ( Nadia kora ) – 4-5 tbsp ( or as required )
21. Melon seeds ( Magaja ) – 1 tbsp
22. Chickpea ( Kabuli buta ) – 1 tbsp
23. Black / Brown chickpeas ( kala chhota buta ) – 1 tbsp
24. Yellow peas ( matara ) – 1 tbsp
25. Sweet Corn kernels ( mitha maka manji ) – 1/4 bowl
26. Green Peas ( Matara ) – 1/4 bowl
27. Soaked Peanut ( China badam ) – 2 tbsp ( approx. )
28. Cumin seeds ( jeera ) – 1½ tbsp
29. Fenel seeds / Saunf ( pana madhuri ) – 1 tbsp
30. Black Pepper corn ( kala golmaricha ) – 1/2 tbsp
31. Cinnamon stick ( dalchini ) – 2 inch
32. Green Cardamom ( gujurati ) – 2-3 pods
33. Cloves ( labanga ) – 4-5 pcs
34. Baly leaves ( teja patra ) – 3 pcs
35. Cumin seeds – 1/4 tbsp
36. Mustard seeds ( sorisa ) – 1/4 tbsp
37. Dry Fenugreek leaves ( kasuri methi ) – 1 tbsp
38. Clarified Butter ( Ghee ) – 2 tbsp
39. Dry Red Chilli ( sukha lanka ) – 3-4 pcs
40. Turmeric powder ( haladi gunda ) – 1/2 tbsp
41. Kashmiri red chilli powder – 1 tbsp
42. Salt to taste
43. Jaggery ( guda ) – 1 tbsp ( approx. ) or as per taste
44 . Oil ( as required )
