Healthy Mediterranean Chicken Recipe Made Easy!

This is one of the best Mediterranean chicken recipes, not only is it a delicious dish but also packs a punch in terms of health benefits. If you like one pan meals, then this is for you. Plus, it’s ready in just 20 minutes, making it perfect for busy weeknights.

Now, for those who don’t like anchovies. While some might be hesitant to use them, they actually contribute a lot to the dish. Let me explain! Anchovies add a subtle umami flavour, that enhances the overall taste of the chicken without making it taste fishy. Umami is often described as the savoury or meaty taste, and it’s one of the five basic tastes alongside sweet, sour, bitter, and salty. So don’t be scared to use them.

In terms of health benefits, this dish is packed with protein from the chicken breasts, which helps in muscle growth and repair. The extra virgin olive oil used in cooking is rich in monounsaturated fats, which are heart-healthy and can help reduce the risk of heart disease. So use a good one, don’t buy the cheap fake ones in your supermarket. (See my video on buying good olive oil)

The garlic and chili make the dish tasty and help fight off germs and reduce inflammation. Garlic is like a superhero for your immune system and can even help with blood pressure and cholesterol. Cherry tomatoes give you vitamins and antioxidants that keep you healthy. And olives bring in good fats and more antioxidants, especially vitamin E. So, not only is this delicious Mediterranean chicken quick and easy, but it’s also really good for you. So, enjoy it today!

the dog licking its mouth is my favourite part🥰

Including both olives and anchovies means that it could be very salty, so anchovies will be left out. Perhaps replacing anchovies with shrimps could work. I'm not a fan of chilly peppers, so regular red peppers will do. I will try this soon. Looks like a simple 30 minute recipe.

Looks good but seeing raw chicken on a wooden cutting board doesn’t exactly whet my appetite

I love your recipes. I have adapted them into my everyday cooking, and have so for the past year. My blood pressure is under control and as a diabetic, my A1c is very stable. My physician has remarked "l dont quite know what you are doing…keep doing it. He also commented that this is the healthiest he has known me to be in the 20 years we've known one another. My energy level is better than it has ever been.

Thank you for helping me make changes in my diet/lifestyle…it has given me a new lease on life and i am grateful in many ways. For me to be 67 years young…life is good❤
