Hello Everyone!
We are back with a new recipe of Thukpa. We are making Veg Thukpa today. Vegetarian Thukpa is a classic soup like dish from Tibet widely popular in Nepal, North Eastern region of India and also very popular in Leh Ladakh. Some classical vegetables which are added to the Thukpa are carrots, radish, tomatoes, spring onions and capsicum. You can add other vegetables of your choice as well. Garlic, ginger and chili added to the Thukpa also adds more flavor to the the broth. In the Nepali version cumin and coriander powder is also added. It is a great recipe to have when your feeling sick with cough and cold or want something to warm you up on a cold day.

Here is the complete list of the ingredients:
300 gm Noodles
3 tbsp cooking oil
1 tsp cumin seeds
1 medium onion
100 gm mushrooms
100 green peas
1 large carrot
1 capsicum
100 gm beans
½ tsp turmeric powder
1 tsp salt
2 tsp coriander and cumin seeds
1 liter water
2-3 tbsp soy sauce
spring onions
coriander
(other vegetables of your choice)
spicy chili sauce
chhat masala
