My very best Vanilla Cake



This is my best vanilla cake recipe. Soft and plush with a beautiful vanilla flavour and stays perfectly fresh for 4 whole days! It brings together fluffiness of Japanese cotton cakes with butteriness of Western butter cakes, plus an age old bakers’ trick for extra moistness to create the ultimate, classic sponge cake.

Fluffier, more tender and less greasy than the typical yellow cakes, much more moist than traditional sponge cakes!

I have made the cake using this recipe, turned out very moist, rich mouthfeel and at the same time, dense (not hard, but velvety). This is not the light fluffy kind of (sponge) cake . If you want moist cake, then this is the ultimate moist cake.

Made this cake yesterday. It is sensational and worth the time spent (even with my hand beater). Shortcuts are the enemy of excellence. The video is very helpful and only lasts for a little over two minutes. I suggest you watch the video beforehand as the written instructions are not easy to follow. (As males often do, I made it from the written recipe without the video assistance so it was a challenge). May I suggest a review of the method for people that may not watch the video first. Step 4 of the Finish Cake Batter instructions could be made clear by giving each mix in steps 1.2.3, and4 labels such as Mix A,B,C,and D.
Or alternatively changing the descriptors of the mix made in step3. Thank you Nagi for this masterpiece.

I don’t understand how everyone is getting such great results. I’ve tried this recipe on 3 separate occasions and the results are a dry, crumbly cake. I’m not new to baking. I’m very experienced so I’m positive there is an issue with the posted recipe and not with my baking. I’ve noticed in the comments some people are posting the recipe with 3 tsp oil but the recipe I printed from her site states 3 TBSP oil. I can’t imagine that this is what’s causing the poor results. Anyone?

Do you realise, in the written instructions on your website ypu have left out the part were you add the vanilla and oil 😑

Great recipe, loved that it was so detailed and easy to understand and follow. I put a norwegian twist on the cream filling and frosting from my grandmothers recipe. Let's see how my family likes it fingers crossed
