This Sabut Hari Matar ki Sabji is simply what it says, peas cooked in the pod.
We always remove the peas from the pod and then cook the peas. But matar ki sabji is different!
This matar ki sabji is quite spicy, masaledaar, and chatpata- tangy too!
The peas are cooked in a masala of fried onions, ginger garlic and spices till they are quite well done. The result, a chewy green peas sabji that tastes delicious.

Recipe :
Sabut Hari Matar ki Sabji
Preparation time: 20 minutes
Cooking Time: 30 minutes
Serves :3-4

Ingredients:
500g green peas in pod
3 medium onions
2 tbsp ginger garlic paste
2 tbsp dry mango powder
1 tsp red chili powder
2 tbsp coriander powder
1 tsp garam masala powder
Salt to taste
1 tsp cumin seeds
1/8 tsp hing (asafetida)
3 tbsp mustard oil
Oil to fry

Method:
Wash and wipe the green peas.
Finely slice the onions and fry in medium hot oil till golden brown.
Mix the powdered spices with the ginger garlic paste, crushed fried onions and ½ cup water.
Heat mustard oil to smoke point and cool slightly.
Add the cumin seeds and the asafoetida and allow it to splutter. Add the washed peas and sauté the peas till they are slightly crisp and golden on the outside. Add the masala paste and salt to taste and mix well. Continue to sauté till the ginger garlic paste loses its Ross smell and the green peas are well coated with the masala.
Remove from heat, sprinkle the garam masala powder at the chopped coriander leaves and cover and set aside for 5 minutes. Serve, hot with a dash of lemon juice.
