Homestyle Baingan Aloo Recipe | Quick Cooker Baigan Sabzi | बैंगन आलू की सब्जी | Chef Sanjyot Keer

Written recipe of Baingan Aloo
Prep time: 5-10 minutes
Cooking time: 15-20 minutes
Serves: 4-5 people

Ingredients:
EGGPLANT | बैंगन 4 NOS. / 400 GRAMS
POTATO | आलू 4 NOS. (PEELED)
TOMATO | टमाटर 3 NOS.
GINGER | अदरक 2 INCH
GREEN CHILLI | हरी मिर्च 3 NOS.
GHEE | घी 1-2 TBSP
CUMIN SEEDS | जीरा 1 TSP
SALT | नमक TO TASTE
TURMERIC POWDER | हल्दी पाउडर 1/2 TSP
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP
CORIANDER POWDER | धनिया पाउडर 1 TBSP
WATER | पानी A SPLASH
SALT | नमक IF REQUIRED
GARAM MASALA | गरम मसला A PINCH
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Wash & cut the eggplant into large dices, similarly cut the potatoes into wedges & chop the tomatoes roughly as well.
Add the ginger & green chillies into a mortar & grind it into a coarse paste, you can also use a small mixer grinder.
Set a pressure cooker over high flame, add ghee & let it heat up.
Add cumin seeds & let them crackle, then add the ginger & chilli, stir & cook over high flame for 30 seconds.
Then add the tomatoes & cook them over high flame for 1-2 minutes
Add the eggplant & potato followed by salt & powdered spices, stir well & add water, then pressure cook over medium low flame for one whistle then switch off the flame & let the cooker depressurize naturally.
Open the lid, stir well & cook over high flame until the desired consistency is achieved.
Lastly taste & adjust salt if required & also add garam masala & fresh coriander & stir well.
Delicious, quick & low effort baingan aloo is ready.

These simple recipe is very useful office hours. I cooked it with Pach foran (mixer of five spices)in place of jeera, it tastes so good.
